Instructions

  1. Sauté Onions: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the finely chopped white onion and cook for 2 to 3 minutes until softened, but not browned.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook, breaking it apart with a spoon, until fully browned, about 7 to 10 minutes. Drain any excess grease if necessary.
  3. Add Seasoning: Stir in the canned green chiles, taco seasoning packet, and ¼ cup water. Let the mixture simmer for a few minutes until it thickens and evenly coats the beef. Remove from heat.
  4. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.
  5. Soften Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds to soften them, preventing cracking during folding.
